You learn something new everyday

Admittedly, this is relatively mundane information, but pertinent, I think.  I had no idea that you are not supposed to cook with extra virgin olive oil, and that heating it denatures it and turns it into a trans fat!  Whoops. 

If you need to cook with oil, you should just use plain old butter or coconut oil, which doesn't denature when heated to high cooking temps.  And butter has some kind of natural antibacterial properties?!

Last, but not least, we actually need a small amount of saturated fat in our diet; 10% of our fat intake should be saturated fat; hence, why it is ok to cook with small amounts of butter.
